Jalapeno peppers can be harvested in the early spring and again in the fall, depending on your state. In general, it is best to harvest jalapenos when they are just beginning to turn red or green. This allows them to develop their full flavor without fully ripening and losing heat. However there are some people who would like a hot pepper that is fully mature such as when you see an entire jalapeno flower turning red before it even begins growing pods inside. Pick these peppers at any time of year if you prefer for this reason but we recommend picking jalapeño peppers in the springtime so they don’t take too long to ripen and lose their heat completely.
